Summary

The study aimed to determine the proximate composition, energy value, minerals, and fatty acid profile in fillets of juveniles surubim (Pseudoplatystoma corruscans) from fish farms. Fillet samples were collected from a slaughter unit located in the Vale do Paraíso-RO, Brazil. Samples were obtained from juvenile surubim fillets weighing 800 ± 20g and measuring 35 ± 3cm in total length. The surubim fillets had a proximate composition (g/100g) of 1.83g of ash, 20.67g of crude protein, 6.04g of total lipids, and 78.54% moisture, with an energy value of 573.38 kcal/100g. Additionally, they showed mineral contents (g/100g) of 0.46 mg of total iron, 32.0 mg of Na+, 176.0 mg of K+, 107.0 mg of Ca²+, and 78 mg of Mg²+.
